Cooking makes the food taste soft and makes the taste better. Foods definitely are healthy whether consumed raw or cooked or steamed.  But ever wondered there can be some food which are healthier when eaten raw??? The list is as follows:

1. Beets: 

  • Garden beets have low calories, zero cholesterol and small amount of fat. Raw beets are an excellent source of folates which are important for DNA synthesis and have the potential to prevent neural tube defects when given during peri-cobeets1nception period.Extensive cooking may deplete its level upto 25%.
  • Beets also contain glycine betaine, small amounts of vitamin-C , B-complex vitamins such as niacin (B-3), pantothenic acid (B-5), pyridoxine (B-6) and minerals such as iron, manganese, copper, and magnesium, fiber, and unique plant derived anti-oxidants.
  • Top greens are an excellent source of carotenoids, flavonoid , anti-oxidants, and vitamin A

 

 

2. Broccoli: 

According to researchers(Journal of Agricultural and Food Chemistry), raw broccoli provides more nutritional benefits than cooked ones.

  • Raw broccoli fasten sulforaphane absorption. Sulforaphane is a compound which is thought to thwart cancer  by helping to stimulateraw-broccolithe body’s detoxifying enzymes.
  •  Also, from USDA product nutrition database, when compared to cooked, raw broccoli had similar amount of calories, lesser fiber and folate but high amount of potassium, vitamin C, iron and Calcium
  • Broccoli also contains goitrins (sulfur compounds which can reduce thyroid hormone production), but when the vegetable is cooked, goitrin becomes unstable, thus reducing goitrogenic properties. But hypothyroidism patients can enjoy it steam or cooked and avoid raw.

 

 

3. Onions:  Onions are low in calories, and contain no fat or cholesterol. Plus, they contain fiber, folic acid, B vitamin that helps the body make healthy new cells. One should include both 12-08-onionred and yellow onion in their diet.

  • Onions raw or cooked, are healthy. But raw onions have higher levels of organic sulfur compounds that provide many benefits, according to the BBC. Sulfur compounds in red onions increase the body’s anti-clotting abilities and possibly anti-platelet activity. These sulfur compounds may also aid in lowering triglyceride levels in the blood and boost the cell membrane function in red blood cells.
  • But raw onions may worsen heartburn in chronic heartburn or gastric reflux disease patients (according to one study in the American Journal of Gastroenterology). The carbohydrates in onions can cause gas and bloating.

 

4.  Red Bell Peppers: 

Bell peppers are one of the good source of vitamin C. Red bell peppers are more mature than green, orange or yellow bell peppers. Since Vitamin C is easily destroyed by heat, so cooking above 375 degred-bell-peppers-glowing-skinrees may decrease its nutritional value (according to NIH).

Bell peppers also contain Vitamin B (vitamin B-6 and folate). B vitamins are also water-soluble and begin to degrade on heating. However, the same heat can also make the remaining B vitamins easier to absorb (as per The American Dietetic Association).

 

 

5.  Raw Nuts: Mixed Nuts

The different types of nuts are high in unsaturated fats and low in saturated (harmful) ones. They are also rich in other bioactive compounds (high-quality vegetable protein, fiber, minerals, tocopherols, phytosterols, and phenolic compounds). It reduces LDL, risk of blood clots, incidence of coronary heart disease and gallstones in both genders and diabetes in women.

Raw nuts are said to have more amount of Iron, Magnesium and Phosphorous in comparison to roasted ones. Moreover, roasted nuts contain extra fat and also are higher in calories.

Raw coconut can also boost up immunity and  have many minerals. Drinking coconut water  has hydrating ability and the water have high levels of electrolytes. Coconut water is also rich in minerals (like Na, K, Mg). Dried coconut or sweetened coconut does not give the same benefits.  Coconut flavored substances should be avoided.

Garlic (contains allicin) is known to have anti-bacterial, anti-clotting and anti-cancer activity. Cooking garlic can diminish some of its properties. Microwaving or heating garlic for more than 10 minutes diminishes its anticlotting effects. Heating garlic has been shown to reduce its anticancer properties. However, crushing it and allowing it to stand for 10 minutes before microwave heating for 60 seconds may preserve some of garlic’s anti carcinogenic activity. Also, microwaving or heating garlic for more than 10 minutes diminishes its anticlotting effects.

 

 

9. Juice:  11

Juices helps in digestion, saves energy and helps in weight loss. Juicing raw fruits or vegetables are way healthier than the cans and carton ones. Store bought juices may contain chemicals such as, flavoring agent, coloring agent, sweeteners, and preservatives. Juicing from raw vegetables and fruits will have more amount of vitamins, minerals, enzymes and flavanoids. Also, handmade juices have more of antioxidant or anti viral properties.Fresh juices aids detoxification. Moreover, raw fruits are healthier than juices as juicing takes out fiber.
